Our approach to menu design is what sets us apart. Prepared by hand, and with a strong focus on sustainability, all of our produce is local, free range where possible, and the origin is totally traceable. We draw inspiration from family dinners, grandmothers’ cookbooks, our collective travel experiences, and Melbourne’s diverse food landscape to produce dishes that we know will delight and satisfy.

From day one, we have carried out a commitment to ensure our business activities are socially responsible and conducted in the most sustainable way possible, while striving to have a minimum impact on our environment.

Carbon neutral

We offset our carbon footprint by purchasing gold standard carbon credits. In 2014/15 we offset 59.3 tonnes of greenhouse gas emissions and currently support the Climate Friendly® Tasmanian Native Forest Protection Project. Our Certificate of Climate Action can be found here.

Green energy

Our hot water is heated using solar power and all additional energy consumption is provided by new green wind power.

Sustainable produce

We consult the current Australian sustainable seafood guide in our selection of fish and crustacean dishes. We use a local baker and fruit and vegetable supplier and 90 percent of our menu items are prepared by hand in our North Melbourne kitchen so that we can control all of the ingredients that are used.

Waste management

In our kitchen, different receptacles are used to separate cardboard and paper from general waste and glass and plastic. All the disposable products we use are either 100 percent biodegradable or recyclable. Specific waste plans are implemented for each event to ensure maximum recycling and minimum impact on the environment.

Local produce is used wherever possible;
however, if an interstate or overseas product is more sustainable, we will choose that product. We factor into our carbon offset scheme the additional food miles that arise from using such products.

Social responsibility

Our everyday catering deliveries are packaged in biodegradable wooden boxes that are made for us by Creative Opportunities, a business enterprise of The Salvation Army. They provide meaningful employment and training opportunities for people with disabilities, through sustainable community business.
